Shelby Sitko, RD, CEDS, is a registered dietitian at the ACUTE Center for Eating Disorders and Severe Malnutrition, currently serving as Senior Registered Dietitian. She is passionate about providing individualized, evidence-based nutritional care and helping patients achieve meaningful progress in their recovery. With a strong background in dietetics and specialized training in eating disorder care, Shelby combines clinical expertise with a collaborative, patient-centered approach that supports both patients and the interdisciplinary team.

Shelby Sitko, RD, CEDS, has been part of ACUTE Center for Eating Disorders and Severe Malnutrition since 2016, first as a Registered Dietitian and then in 2023 as Senior Registered Dietitian. She earned her Bachelor of Science in Nutrition and Dietetics from Central Michigan University and is a Certified Eating Disorder Specialist through the International Association of Eating Disorder Professionals (iaedp™), a designation she has held since 2020. Shelby has served on ACUTE’s Schwartz Rounds Committee, contributing to clinical discussion and professional growth.

Shelby’s professional experience includes working with eating disorder patients during her internship at a partial hospitalization program in 2015 and assessing patients for malnutrition at both the VA and Denver Health. She has co-authored research, such as Metformin Abuse: A Novel and Dangerous Purging Behavior in Anorexia Nervosa and Calorie Needs of Older People with Restrictive Eating Disorders Undergoing Refeeding. She also contributed to the 4th edition of A Guide to Medical Care and Complications. She has also been recognized with seven Compassionate Care Awards at Denver Health.

What drives Shelby most is ACUTE’s collaborative, multidisciplinary approach, which allows her to work closely with patients to build rapport, set achievable goals and provide consistent follow-up. She values individualized care and the ability to see meaningful improvements in patients’ recovery over time.

Outside of work, Shelby enjoys exploring new restaurants with her husband and friends and spending quality time with her son, Emerson.

ACUTE Earns Prestigious Center of Excellence Designation from Anthem
In 2018, the ACUTE Center for Eating Disorders & Severe Malnutrition at Denver Health was honored by Anthem Health as a Center of Excellence for Medical Treatment of Severe and Extreme Eating Disorders. ACUTE is the first medical unit ever to achieve this designation in the field of eating disorders. It comes after a rigorous review process.
